Scotch bonnet, also known as bonney peppers, or Caribbean red peppers, is a variety of chili pepper named for its resemblance to a tam o’shanter hat. It is ubiquitous in West Africa. Most Scotch bonnets have a heat rating of 80,000 – 400,000 Scoville units.
Range in color from yellow to green to red, with some varieties ripening to shades of orange and brown. They are sold both fresh and dried.
Flavouring and Spicing: Due to its spectacular colour and flavorful aroma, scotch bonnet can be used for flavouring and spicing different African, American, Asian, European and Australian cuisines including pepper recipes such as pepper sauce, hot sauces and pepper soup etc.
